Title: Exploring Sustainable Food Culture and Frontier Microbial Research through Narazuke , a Traditional Fermented Food
Abstract:
While preserving a tradition over 150 years in the making, we are redefining traditional fermented foods through the lens of science. This includes sustainable practices such as upcycling sake lees—a byproduct of sake brewing—and discovering ethanol-tolerant lactic acid bacteria through joint research with Nara Institute of Science and Technology (NAIST).
From the perspective of a local business leader, I will share how the preservation of regional culture, global expansion, and cutting-edge microbial research intersect to create new value, providing insights on how students can meaningfully connect with society.
Note: NAIST Students, faculty, and staffs are welcome to attend, but students will have priority for refreshments.
Please be advised that the refreshments and drinks provided are not allergy-friendly.We appreciate your understanding.
